I am actually Mexican, born and bred in the US, though I lived in Mexico for about 10 years. I appreciate this post, as I believe Diana was truly a master of authentic Mexican cooking. I remember the first time I came across one of her books, this same one here, and the instructions for some yams included leaving the yams out in the sun for 3 days, turning every so often, and that is EXACTLY what my mom used to do! I thought, "this lady KNOWS!!" <br />So actually the point I wanted to make was, why oh why, do non Spanish speaking people always give pronunciation for words that end in e, as in "mole" to sound like "mo-LAY", when in fact, it should be "mo-LEH".
